yer ive got an amp that puts out 2x200 rms
will this be enough for 2 subs that can handle 500rms?

sure could...i had 45x45 bridged into a 750watt rms 15 years back..didnt run at full potential but saved up and bought bigger.. 
some years back..not 15 years back....geeeesus

Before I can give you an accurate reply I'd need to know what sort of amp and sub is it?
2 x 200 continuous should be enough power to get them running satisfactorily yes. They may distort at high volumes a little as the amp struggles but it should be fine.
More power is always better though as power = control.
